Oktoberfest Stew with Lager and Smoked Sausage Traci Kenworth Adapted from Ingrid Beer Who knows it’s time for Oktoberfest? That delicious time of year when the Apple Butter hits Burton, OH and visitors come from near and far to celebrate. Personally, I love their book sales! Ingredients: 1 T. olive oil 1 pkg beef smoked sausage, cut into bite-size pieces ½ head small cabbage, halved again, sliced ½ t. pepper Pinch salt 2 cloves garlic, finely chopped 3 c. chicken stock, divided 4 potatoes. diced 1 ½ T. apple cider vinegar Parsley Place olive oil in soup pot over the stove. Add sausage and cook until carmelized about five minutes. Add sliced cabbage, carmelize another five minutes. Add in pepper, and pinch of salt. Stir in garlic and allow to become aromatic. Add 1 c. chicken stock. Allow to reduce about three minutes. Add cubed potatoes and rest of chicken stock, allow to boil, reduce heat to simmer about forty mins. Check veggies are tender. Stir in apple cider vinegar and parsley. More salt. Serve.

    1. You’re welcome! Hope you enjoy! You can, of course, use lager instead of the one cup of chicken broth. I didn’t have any on hand.
