Mississippi (Blood) Pie Traci Kenworth Adapted from lecremedelacrumb.com Very tasty and rich! Ingredients: 1 2/3 c. gluten-free or regular flour 2 T. unsweetened cocoa powder (We used Hershey’s) 7 T. chilled butter 2 T. sugar 5-6 T. ice cold water (I ended up doubling these numbers) Filling: 12 T. butter, slightly softened 1 ¾ c. brown sugar 4 eggs 1 t. vanilla 4 T. unsweetened cocoa powder 6 oz. semi-sweet choc. chips, melted 1 ¼ c. half-and-half or light cream 1 8 oz. container whip cream, thawed (We bought the large container from Walmart) Optional: red food coloring (We used the spray from Walmart) Preheat oven to 375. Spray tin or glass pie pan with cooking spray. Dust lightly with flour. Make sure to use gluten-free if making the gluten-free kind. In large bowl, mix together flour and cocoa powder. Cut in butter with two forks or a pastry knife. Mixture should resemble fine crumbs. Add sugar and mix. Stir in flour a T. at a time until mixture comes together. Again, I had to double the water for these. Cover with plastic wrap and chill fifteen mins. Place dough in pie dish and use plastic to press down into pan. Shave off excess with butter knife.
