What’s to Eat! Sundays 4/26/2020 Traci Kenworth Baked Garlic Parmesan Potato Wedges These are a tasty, tender wedge that holds up well once you learn how easy it is to slice them and bake them. Yes, BAKE! So, less calories here, more goodness. They are a yummy treat to bring your family to the dinner table. Prep Time Cook Time Total Time 15m 35m 50m Adapted from http://www.lecremedelacrumb.com Ingredients: 3 large potatoes, sliced into wedgs 4 T. olive oil 2 t. salt 2 t. garlic powder 2 t. Italian seasoning ½ c. shredded Parmesan cheese Fresh parsley, ranch or blue cheese for dipping (optional) Preheat oven to 375 degrees F. Place potatoes on cutting board after washing them. Cut them in half and then skin side up, cut the halves in half again and then those in half again until you get about 1-inch wedges. Place on baking sheet and drizzle with oil. In small bowl, mix seasonings and then sprinkle over potatoes. Bake 35 minutes until fork tender and brown. Sprinkle with parsley (or cilantro) and serve with dressing if you wish.
